"Secrets to Cooking TexMex"
Chewy Pecan Pralines
INGREDIENTS:

2 cups Sugar
-
1 1/2 cup Karo syrup (light)

1 1/2 tsp Salt
-
1 cup Cream (or Half & Half)

1/2 lb. Butter (2 sticks)

4 cups Pecans (halves or pieces)

2 tsp Vanilla extract
DIRECTIONS:
Mix all ingredients except pecans and vanilla.
Cook to hardball stage (250 degrees). Add pecans and vanilla.
Set pan in cold water. Drop onto well-greased foil and let cool.
(Don't EVEN try to put these on waxed paper--
it'll become a permanent part of your pralines!)
Wrap each praline in 'plastic wrap' and store in an airtight
container.
