"Secrets to Cooking Tex-Mex"

Huevos a la Mexicana
Kick it up a notch with this hot and spicy combination of serrano peppers, tomato and onions
mixed with scrambled eggs.  Muy caliente !!

INGREDIENTS:


DIRECTIONS:
Remove the stems from the peppers, then chop until 1/8” in size.
Place in a small bowl and set aside.  Wash you hands with soap and
water immediately to avoid burning your eyes or skin.

Peel the onion and slice, then dice or chop until you have 1 cup of
the yellow onion.  Core, then chop the tomato’s until the pieces are
1/4” or less in size.

In a separate bowl, add the eggs, Half & Half, salt and pepper.

Mix with a wire whisk or fork until well blended.

In a large frying pan, melt the margarine or butter on a medium heat.
When hot, add the onions and serrano peppers.  Cook about 3 minutes,
spread evenly across the bottom of the pan, then add the tomatoes.
Now add the egg mixture.  Let sit about 1 minute until it starts to ‘set up’,
then stir occasionally until the eggs are done.
Remove and serve immediately.
