
"Secrets to Cooking Tex-Mex"
Pecan Bars
These chewy, sweet tasting pecan bars are always
a hit with men.
They are made on a large sheet pan, then cut
into 2" squares.
Great for breakfast or mid-morning snack with
a cup of coffee.
INGREDIENTS:

1 lb. light brown sugar

4 large eggs, slightly beaten

1 tsp. salt

2 cups pecans, chopped

2 tsp. vanilla

2 cups all-purpose flour

2 tsp. baking powder
DIRECTIONS:
In a large saucepan on medium low heat, add the brown sugar and eggs.
Heat until the sugar is melted, no longer.
Remove from the heat and add the remaining ingredients. Stir to
mix well with a large spoon.
Pour batter into a buttered, floured cookie pan that has sides.
Pour batter so that it is 1/2" inch thick.
Bake for 15 minutes at 350 degrees. Check with a toothpick.
Remove, let cool and cut into 2" squares. Store in an airtight
container.
