
"Secrets to Cooking Tex-Mex"

BLACK BEAN SOUP
Ingredients:

4 tablespoons margarine
-
1/2 cup chopped carrots
-
1/2 cup chopped celery
-
1/2 cup chopped onion
-
1 can (10 oz.) RO*TEL Whole Tomatoes & Green Chilies
-
1/4 cup sherry
-
3 cans (15 oz.) black beans
-
1/4 cup minced cilantro
Directions:
In a large pot, cook carrots, celery and onion in margarine until
tender, stirring often, about 15 minutes. Add remaining ingredients.
Heat to a boil. Reduce heat and simmer 20 minutes, stirring occasionally
to break up tomatoes. Makes 5 servings.
