
"Secrets to Cooking Tex-Mex"

GRILLED CHICKEN PIZZA
Ingredients:
-
PAM All Natural Cooking Spray
-
10 8-inch flour tortillas
-
1 can (10 oz.) RO*TEL Italian Harvest, undrained
-
1 can (16 oz.) refried beans
-
1 whole skinless, boneless chicken breast-grilled & shredded
-
2 1/2 cups shredded cheddar cheese
-
1 1/2 cups shredded lettuce
-
1/2 cup chopped red pepper
-
1/4 cup chopped green onions
Directions:
Spray each side of each tortilla lightly with PAM; place on a baking
sheet.
Broil until slightly toasted, flip and toast other side. Preheat
oven to 350
degrees F.In a medium bowl combine tomatoes and refried beans.
For
each pizza, spread 1/4 cup tomato-bean mixture over each tortilla.
Top
with 2 tablespoons chicken, 1/4 cup cheese, then another tortilla;
repeat
layering ending with cheese. Bake in a preheated oven 20 minutes
or until
heated through. Top with lettuce, red pepper and onion.
Makes 5 servings.
