"Secrets to Cooking TexMex"
Hot & Chunky TOMATO SAUCE
1 tablespoon olive oil
1 clove garlic, minced
1 red bell pepper, diced
1 pound (about 8) plum tomatoes, chopped
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies
2 tablespoons grated Parmesan cheese
1 tablespoon chopped fresh cilantro
Heat oil in a large skillet. Sauté garlic and pepper until soft,
5 minutes. Stir in remaining ingredients; reduce heat and simmer
10 minutes or until tomatoes are soft. Serve over pasta.
Makes 4 to 6 servings.
