
"Secrets to Cooking TexMex"

SPICY SKILLET CHICKEN
Ingredients:

2 tablespoons olive oil
-
4 boneless, skinless chicken breast halves

1 medium onion, chopped
-
3 cloves garlic, minced
-
2 cups sliced fresh mushrooms
-
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies
-
1/4 cup shredded part skim mozzarella cheese
Directions:
In skillet, cook chicken in oil until golden brown. Add onion
and garlic, sauté until tender, about 5 minutes. Add mushrooms
and RO*TEL; reduce heat. Cover; simmer 25 minutes, stirring
occasionally until meat is done. Sprinkle with cheese.
Replace
cover and heat until cheese melts. Serve with rice.
Makes 4 servings.
