SPICY HOME FRIES
1/4 cup margarine
4 medium potatoes (about 1 1/2 lbs.) cut into 1/4-inch slices
1 green bell pepper, cut into 1-inch pieces
1 onion, sliced
2 cloves garlic, minced
1 1/2 teaspoons salt
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies
In a large skillet, sauté potatoes, green pepper, onion, garlic and
hot margarine 10 to 15 minutes or until potatoes are golden.
RO*TEL, heat to a boil. Reduce heat and cover, simmer 5 to 10
minutes or until potatoes are tender. Makes 4 servings.
