"Secrets to Cooking TexMex"
1 can 10 oz. RoTel Dice
Tomatoes & Green Chilies, drained; reserve liquid
1 1/2 cups all purpose flour
1 1/2 tsp. baking powder
1 tsp. ground nutmeg
1 tsp. ground cinnamon
1/4 tsp. each ground allspice, cloves, ginger
1/2 cup each dark raisins and golden raisins
1/2 cup butter
1 1/2 cups sugar
1 tsp. vanilla extract
2 tbl. grated lemon peel
sugar to garnish
Preheat oven to 350 degrees. Spray an 8x8-inch cake
pan with PAM. Combine flour, baking powder, spices
and salt in a large bowl. Toss dark and golden raisins
with 1/4 cup flour mixture in a separate bowl; set aside.
Cream butter and sugar until light and fluffy. Beat in eggs
and reserved liquid from RoTel. Stir in flour mixture, raisins,
RoTel Dice Tomatoes, vanilla and lemon peel. Pour into
pan; bake 50 to 55 minutes or until golden. Wooden
toothpick inserted into middle should come out clean.
Cool 10 minutes on wire rack. Remove from pan; cool

completely with top side up. Sprinkle with confectioners'
sugar. Makes about 6 servings.
