"Secrets to Cooking TexMex"
1 lb. ground beef
1 medium onion, chopped
1 small green pepper, chopped
2 cans (15 oz.) navy beans, drained
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
PAM All Natural Cooking Spray
6 slices crisply fried bacon, crumbled
1 cup (4 oz.) shredded cheddar cheese
Preheat oven to 375 degrees F. In a large skillet, brown beef
and bell pepper. Drain excess drippings. Stir in beans
and RO*TEL; heat
to boiling. Reduce heat; cover and simmer 10 minutes until slightly
Spoon half the mixture into a 2-quart casserole which has been sprayed
PAM. Sprinkle with half the bacon and half the cheese.
Pour remaining bean
mixture over cheese. Top with remaining bacon and cheese.
30 minutes or until mixture is bubbly. Makes 6 servings.
